The basis of the food guide pyramid
Bread, grain, cereal, rice and pasta are the basis
of the food guide pyramid and should therefore play
a prominent role in our diet. Two third of the energy
and half of the protein in the diet are provided by
grains.
Cereals are an important ingredient in pasta, bread
and pastry. Therefore all of them contain lots of complex
carbohydrates and some proteins. The heavy metal content
of grains is related to the environmental condition
of the soil the cereal grasses have been grown upon.
If the flour is contaminated with heavy metals, at least
some heavy metals will be found in cereal products as
well.
