Determination of Water Content in Meat and Meat Products

Meat contains a relatively large amount of water that
is enclosed in cells. The water content of raw beef (whole
brisket) for example is about 70% but also pork or sausages
can be analyzed. Therefore, the volumetric method of the
water determination by Karl Fischer titration is apropriate.

listed below. A Polytron (high-frequency mixer) is used
for extracting the water from the cells.
