Determination of Water Content in Meat and Meat Products by volumetric Karl Fischer Titration

Meat contains a relatively large amount of water that is enclosed in cells. The water content of raw beef (whole brisket) for example is about 70% but also pork or sausages can be analyzed. Therefore, the volumetric method of the water determination by Karl Fischer titration is apropriate. the necessary devices for carrying out the analysis are listed below. A Polytron (high-frequency mixer) is used for extracting the water from the cells.
