Determination of anions in brown and white sugar using ion chromatography

Sugar can be produced from sugar cane or from sugar beet. In beets the soluble constituents as sugar, salts, acids, proteins and pectins are extracted with water. The extract is then concentrated up by evaporation and filtrated in multiple steps. Finally after centrifugation and recrystallization white sugar is obtained. As brown sugar is less intensively purified it contains more alkali metal and alkaline earth metal ions as well as anions than white sugar.


Analysis of sugars by ion chromatography

Sample preparation is easy and consists of 1:10 dilution of sugar with ultrapure water followed by filtration.
